Up until now I've always used pancake batter to deep fry things and today I took a different route which has opened a new door to a whole new world of deep frying. I read online that cornstarch works nicely with deep frying for a more crispy texture. Literally--the best crispy chicken I've tasted in a while. I also used baking powder and baking soda which made the batter texture a bit less doughy than pancake mix batter. My sister was dipping the chicken nugs into ketchup but I was all about the sweet and sour sauce. I bet it would be really good dipped in sweet chili sauce too. Please make some and be sure to buy a lot of chicken breast when you do!!
Recently I was asked to come up with some finger-food ideas for a catering job. I have to say, this is seriously the freshest, coolest snack I've ever tasted. The herbed and flavorful cream cheese with the cool cucumber, bland pumpernickel, and tang of the fresh dill and other herbs creates a delicious complimenting taste. Be careful, once you have one you just want to keep munching.
I guess technically this sauce isn't an aioli because it isn't made out of egg whites and olive oil but hey, it has mayonnaise in it and that's close enough for me. I love garlic and I love ranch and I LOVE mayo so this sauce is literally perfect in every way. I could dip all kinds of food in it. The sauce is REALLY REALLY good when paired with parmesan cheese, chopped chives, and some coarse black pepper. Try it I dare ya!
If any of you are wondering how to make sweet potato fries you simply peel them, then use a french fry cutter or hand cut the potato into fry shaped pieces and deep fry them in vegetable oil for about 10 minutes or until golden crispy.
PS- Don't make fun of my deep frier picture that's outside, sometimes my family gets made when i use it because all of the hot grease makes my kitchen smell like a fast food joint..... (like that's a bad thing?!)
True story: I sliced up my little habanero pepper and licked my finger (because I've never worked with them before and I'm an idiot/badass). I literally felt like I was right there with Harry and Lloyd when they tried the spicy peppers at the diner in the film Dumb and Dumber. My mom found me freaking out in the kitchen and after she was done laughing she told me that most people wear gloves when cutting and handling such spicy peppers. Soooooooo, please be careful!!
I am so addicted to flavors that are a combination of sweet and spicy! I decided to attempt to make a chicken wing sauce using the sweet flavor of mangos and brown sugar as well as the spicy zing of habanero peppers and chili powder. It turned out to be bomb.com so here's the recipe and please use less pepper things if you aren't a fan of spice.
