I freekin' love sausage gravy. I went all out per usual... there's tons of fresh garlic, sage, thyme, parmesan reggiano, and of course, a fat chunk of butter. This recipe makes enough for 3-4 peeps, but that all depends on how hungry you are. I'm a personal believer in larger personal dishes. I also never keep track of how much of what I use when cooking, so the recipe is subject to change - don't be afraid to add more or less of whatever you like!
Anyways, I always see pictures of shakshuka on my gram feed - and it always looks delicious. I was thinking of flavors that I like to eat with eggs, and then this idea popped into my head. It's great by itself but if you are feeling carby, obviously scoop some of it out and smother it on top of a buttered biscuit or some type of bread.
