Up until now I've always used pancake batter to deep fry things and today I took a different route which has opened a new door to a whole new world of deep frying. I read online that cornstarch works nicely with deep frying for a more crispy texture. Literally--the best crispy chicken I've tasted in a while. I also used baking powder and baking soda which made the batter texture a bit less doughy than pancake mix batter. My sister was dipping the chicken nugs into ketchup but I was all about the sweet and sour sauce. I bet it would be really good dipped in sweet chili sauce too. Please make some and be sure to buy a lot of chicken breast when you do!!
