I've had tons of eggs benedict meals before, but never eggs benedict enclosed in chewy soft steamed buns; I love steamed buns so much.. so naturally, I was day dreaming about them when I came up with this recipe. While searching through my fridge I realized that I had bought this really good hollandaise sauce from Heinen's (my favorite grocery store). And like I always say, the light bulb in my 'stomach' went off.
I really wanted to use pork belly or thick sliced bacon with this recipe, but all I had was chopped pancetta, which is basically the same taste; just very different in terms of texture.
PS- Cooking poached eggs all on your own is very time consuming. I suggest only having one egg in the skillet at a time because they tend to run into each other and get really messy if you try to cook them all at once. I remember the first time I ever tried the method that I suggested below-- catastrophe. It takes practice, don't get too discouraged! You could always use a 6 minute egg if this technique isn't working for you!
