I am having such a hard time writing this blog post because I'm actually eating this right now as I type and I don't want to stop taking bites but I also need to remember the amount of the ingredients I used before they disappear from my brain so here we goooo! The pasta is gone so now I can actually think. A few notes:

Had everything I needed at home to make this and it was sooooo goood. I added a scoop of vegan cream cheese to it per your recommendation it and it was insanely creamy!!

Not gonna lie, this was nasty. Maybe it was my fault for having too high of expectations, but this dish was a big disappointment.

I added a dash of nutmeg, garlic powder, and red pepper flakes to the food processor mixture because I tend to like things on the ~spicier~ side. This was my first time melting violife cheese and I was very impressed! So so so yummy (And I’m not vegan)! Never would’ve thought to add pumpkin to mac & cheese but I think I found my new favorite fall comfort food!
