Hi, okay so this recipe is insane. Before all you food purists come at me - this dish is a combination of my 10 Min Mac & Cheese recipe AND it has elements of cacio e pepe in it to make the ultimate cheesy pasta hybrid !! If you don't like it, don't make it lol. I used pecorino romano cheese, toasted freshly-cracked black peppercorns, shredded mozzarella (instead of cheddar to keep the sauce white) and then heavy cream. Lots of people make mac and cheese different ways (with a roux, without a roux) but I personally think heavy cream is the ultimate creamy cheesy pasta sauce hero ingredient so that's the style I prefer. Delicious flavours. I would maybe cut 1/2 of the whipping cream the next time i cook. Sauce was too liquidiy in pan and used slotted spoon to scoop.

I LOVE this recipe. I don’t do the exact amount of cheese, I will add to make it more thick/cheesy. I also add broccoli in there! It is delicious and SO easy to make.

Made this for my picky 8 year old and he loved it! We did add a little bit of salt and a pinch of onion powder and he ate two whole bowls! Definitely adding to my dinner rotation.

I just made this tonight and it was 10/10. I made a few personal alterations to the recipe, but generally followed the baseline. I swapped out the heavy cream for a can of evaporated milk because that’s all I had on hand, and I think maybe that adjustment required me to add more cheese than this recipe called for. I added closer to 2 cups of a mix of shredded Parmesan and Gruyère because that’s also what I happened to have on hand. But the end result was excellent. Highly recommend!
