Pierogi Pizza with Pierogi Crust

I've eaten different kinds of pierogi pizza before... but never like this. A friend told me that she used pierogi dough instead of noodles in a lasanga that she made and the lightbulb inside of my stomach went off. The crust for this pizza is actual pierogi dough, boiled and buttered. Basically, this pizza is like a giant open faced pierogi. I mean what's better than mashed potatoes, butter and cheese on a snowy December afternoon?

I will say it was super hard to fit the rolled out dough into a pot of boiling water, so the bigger the pot, the better. Be really cafeul at that step - the dough tore for me, but everthing was all good in the long run. Scroll to the bottom of this post to see the steps that were taken to put this pie together!

What you'll need:
  • Pierogi dough - use this recipe. 
  • Butter
  • 1/2 cup chopped white onion
  • 2 cups mashed potatoes 
  • 1 cup cheddar cheese
  • 1 cup white cheddar cheese
  • Parsely for topping
How to make:
  1. Prepare the pierogi dough, and roll it out into a good sized pizza crust. The dough should be somwhere between 1/4- 1/2 inch thick.
  2. Find the largest pot you have, and make sure that the dough crust will be able to fit inside because you're going to have to boil the dough in order to cook it.
  3. Fill the large pot halfway up with water and a pinch of salt. Bring it to a boil.
  4. Carefully, drop the dough in it's crust form into the boiling water and let it simmer for 15 minutes. Don't get discouraged if it tears a little, because when mine was done, it sort of looked like pac-man, lol. (See photo below.)
  5. Fill a skillet with a few slices of butter and cook the chopped white onion until translucent, set aside for topping pizza.
  6. Prepare a baking sheet with tinfoil and grease to bake the pizza on. Preheat the oven to 420 degrees.
  7. Carefully drain and slip the boiled dough crust out of the pot and onto the prepared baking sheet.
  8. Butter the crust, and spread the mashed potatoes on it - just like you would with tomato sauce on a traditional pizza.
  9. Top the potatoes with the cheeses and drizzle the sauteed onions and butter over the top. Sprinkle parsley.
  10. Bake for 15-20 minutes - or unitll the cheese is nice and melty. Slice and serve!
