Every year around Christmas time, my grade school would host a weekend holiday shopping boutique in the gymnasium. Card tables set up row by row with folks from my hometown selling theee most random stuff. I went with my mom every year - started off helping her sell pumpkin pies at the bake sale table and then at a certain point we just attended as guests. However, I never went to shop - I went for the chicken casserole that was served out of the lunchroom every year. This stuff is pure magic. Not the prettiest, I'll admit. But it's damn good. Comfort scooped into a bowl and topped with love that is crunchy cornflake cereal and melted margarin.

This is probably a dumb question, but when you say "absorbed" for the rice--should the rice be done? Or will it do more cooking in the oven?

Hi! This recipe is from an old school church rolodex (basically note cards written by old ladies) and there wasn't an approximate time included. Just cook until the water is absorbed and continue on with the recipe. It always turns out perfect.

Hi! The recipe is originally from a verrrry old school recipe rolodex and that's how the original creator wrote out that step - a little confusing, I know! I've always just cooked until the water is fully evaporated like it says. I've never checked to see if the rice is done at this point but it's always done when the full recipe is completed so it's possible it finishes cooking in the oven.
