Chicken Paprikash Poutine

French fries just make everything better. And whoever thought of smothering them with different types of gravy and cheese curds is an absolute genius.

I used about half a bag of frozen fries and made a giant plate that was enough to serve at least 4 people.. I really hate serving sizes because it all depends on how much someone likes to eat... am I right? I always just say make a bunch and then you'll have more for later.

Ingredients: 
  • ​French fries - whatever kind you prefer
  • 3 chicken breasts
  • Half a stick of butter
  • Half an onion, diced
  • 1 garlic clove, minced
  • 2 1/2 cups of heavy cream
  • Flour for thickening purposes 
  • Paprika (lots of it)
  • 3 teaspoons salt
  • 3 teasoons coarse black pepper
  • 1/3 cup sour cream
  • 2 cups spaetzel (dumplings)
  • A handful or two of fresh cheese curds
  • Parsley for topping
  • Fresh parmesan reggiano for topping
  • Optional: red pepper flakes for spice
Directions:
  1. ​Preheat the oven for the french fries.
  2. Bring a medium pot of water to a boil. Cook the chicken in the boiling water for until done all the way through. (About 10 minutes.) Set aside to cool.
  3. Melt the butter in a large skillet and cook the onion and garlic in it until translucent. 
  4. Add half of the heavy whipping cream and whisk until it bubbles. Add in about a tablespoon of paprika and whisk. Add salt and pepper as well. 
  5. Add in the rest of the heavy cream little by little while continuously whisking. While doing this, also add in teaspoons of flour to thicken the sauce. I wouldn't recommend too much because the thickening process is gradual and you could end up with paste if you use too much.
  6. Add in more paprika, salt, and/or pepper if needed.
  7. Cook the fries. Most packaged fries take about 18-20 minutes in the oven, you want them to finish up at the same time your sauce has settled. 
  8. Once the sauce is a thick, soup-like consistency, add in the spatzel and let it simmer.
  9. Shred the chicken and add it into the sauce and dumpling mixture. Let simmer for 5-10 minutes.
  10. Arrange the cheese curds throughout your pile of fries. Pour the hot chicken paprikash over the top of the pile. 
  11. Garnish with freshly chopped parsley and Parmesan cheese.
