French Onion Pasta Salad

French onion dip x pasta salad. YEAAAAAH BABY.

I was a little worried about it being to thick and creamy so I decided to thin out the dressing with white wine vinegar and a secret ingredient, soy sauce. The thin texture of these liquids helped a ton!! If you want your sauce to be even more thin, you could add in some cooled off pasta water 1 tbsp at a time until it reaches desired texture.

What you need:
  • 2 onions, I used white onions
  • 3 tbsp evoo
  • 1/4 tsp salt
  • 2-3 garlic cloves
  • 3/4 lb farfalle pasta (a little more than half a standard sized box)
  • 1/2 cup sour cream
  • 1/4 cup mayo
  • 1/4 cup white wine vinegar
  • 2 tbsp fresh chopped parsley 
  • 1 tbsp chopped chives
  • 1 tbsp soy sauce
What to do:
  1. Slice up the onions super thin and cook them on low in a skillet with olive oil until caramelized. Season with a little salt and stir on and off every 3-5 minutes until the become soft and golden brown. During the last minute of cooking the onions, add in the minced garlic cloves and cook until fragrant. The while process usually takes about 45 minutes. I know, a labor of love..but so worth it!​
  2. While the onions are caramelizing, bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain the pasta once it's done and let cool before adding to the pasta salad dressing.
  3. Next, make the pasta salad dressing by combining the sour cream, mayo, white wine vinegar, chopped parsley and soy sauce. Taste test with potato chips if you have them! Feel free to adjust the thickness of the dressing with cooled down pasta water from the cooking farfalle. *I saved a few onion strands for topping the dish, looked prettier that way!
  4. Top the dish with reserved caramelized onions, parsley leaves and fresh cracked black pepper. It's good at room temp or chilled - can be kept in the fridge for a couple of days!

Just to clarify - is it 3tbsp or 3 cups of evoo? The ingredients list it as “ 3tbsp cup evoo”. Thank you!

It’s definitely 3 Tablespoons, not 3 cups!

Friend made this for a work lunch and wow: delicious! Only make this if you and/or your guests love French Onion soup, as it tastes nearly the same, which is incredible.

Can’t wait to try this for dinner tonight! I’m adding chicken and I think I will substitute the sour cream for either Greek yogurt or cottage cheese.

What can I substitute for white wine vinegar? (Except rice vinegar) without altering the taste too much

I tried this. It was awful. Perhaps the vinegar I used was off, but it really just felt like I was eating pasta and mayonnaise

I found this recipe on IG reels and really wanted to love it. I made this and found it tasted very sour due to the vinegar. It overwhelmed all of the other more subtle flavors. I couldn't taste the fresh chives or parsley. I also made the mistake of following the instructions to carmalize the onions on low and it taking forever. I have an electric stovetop and after an hour on low and no carmalization, I bumped it up to medium and it worked like a charm. I love french onion flavored everything but I will not be making this again.

You stated you saved some of the onion for topping, but I don't see what part I add the majority of those in. Do I add them to the dressing or just to the pasta after dressing is mixed in?

Where do the chives come into play? Are those the onion on top or is that the caramelized onions?

I also have to agree with "too much vinegar".

Made this for my guy.... and he loves Italian dressing and vinegar based pastas.

Entirely too much "twang".... that's all I could taste.

Additionally.... the onions (while beautifully caramelized) added a wormy stringy-ness that was hard to get over.... but that's just ME.

I’m always looking for different pasta salads! I did half the amount of vinegar, after reading some of the comments, and also substituted sherry for white vinegar and added shredded Swiss and Gruyère cheese. Came out very good!!

Added some shredded Gruyère and crisped bacon bits to the salad plus some extra black pepper, parsley and chives. Used Greek yogurt instead of sour cream. I did thin the dressing a smidge with the pasta water too. It was delicious!
