Award Winning Spicy Noodle Soup

So I won a national recipe contest! Zoup! Soup hosted the “Really good soup contest” in 2014 and I submitted my Spicy Noodle Soup recipe, and won! I won a gift card to Williams Sonoma and also got to cook my soup on two local news stations, one in Detroit (Zoup’s first home) and one in my hometown, CLE. You can try my soup at various locations across the U.S., Zoup tweaked the recipe a little and renamed it “Dragonfire Noodle Bowl.”
 
If I had to describe my spicy noodle soup to someone who’s never had it before I would say it’s a sort of spicy ramen, but instead of ramen noodles it’s made with Korean glass noodles (also called sweet potato noodles and glass noodles.) The noodles are clear, really slippery..and also gluten free. I’ve never seen them at local grocery stores so I suggest if you’re going to look for them to call and ask your local Asian markets or order them online.
 
The recipe is extremely flexible. You can add in more or less of one flavor if you prefer without really messing things up. If you want to keep things meatless, you can use veggie broth but I prefer chicken because I think it’s more flavorful.

Ingredients: 

  • 8 cups of chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon of Asian chili powder
  • 1/4 cup Sriracha hot sauce
  • 1/4 cup of tomato sauce
  • 2 tablespoons of chili oil
  • 1/4 cup chopped scallions
  • 1 cup of mushrooms (dried or fresh, chopped or not)
  • 2 garlic cloves, minced
  • 1 tablespoon of salt
  • 1/2 lb (about one bag) of korean glass noodles

Cooking Instructions:

  1. Fill a large pot with water and bring to a boil to cook the glass noodles.
  2. Bring 6 cups of store bought or home made chicken broth to a low boil.
  3. Add in soy sauce, chili powder, sriracha, tomato sauce, chili oil, and salt in into the broth and mix. 
  4. Add the parsley, scallions, mushrooms, and garlic into the soup mixture. Stir and let simmer for 10 minutes.
  5. While your broth mixture is simmering, use the initial pot of boiling water and prepare the glass noodles according to package directions and drain. Be careful how long you let the noodles sit after the water is drained, they get sticky once their out of water. (If you're not immediately eating, the best way to serve the soup would be to keep the noodles separate from the broth and refrigerate. Once you're ready to eat, combine broth + noodles and reheat either on the stove.)
  6. Put the noodles into the soup broth and slurp away. ​Warning: very spicy!

Question: what brand of asian chili and tomato sauce do you use? I want to make this ASAP but am unsure of the ingredients to use!

Hi Annie, I use De Fratelli tomato sauce, super plain. The Asian chili powder is from a Korean market I'm not sure what the brand name is but as long as it looks exactly like cayenne pepper and is orange and the texture is fine you'll be good. You can actually use cayenne pepper if you want.

I made this soup last night, I think it turned out really well, but I am positive that I used the wrong kind of noodles. Would you mind telling me what brand you use? When I search the web for Korean Broken Glass Noodles, I just get recipes for dishes, not any specific brands or further descriptions.

Jane,

This is my favorite soup from Zoup! and I'm very excited to find the recipe. I really enjoy it and I'm looking forward to trying it at home.

One question though: their website mentions Red Curry Paste as part of the recipe. Have they modified your original recipe?

They changed my recipe. They use veggie broth instead of chicken broth and then I use chili oil and asian chili powder instead of red curry paste!

This looks amazing I can't wait to try it! I have been doing easy roasted veggies lately for dinner but this recipe definitely looks good enough for a trip to the store! I just stumbled across these recipes and am so glad I did because you seem to match good food with humor and I am loving it! Cheers!

Ingredient list states 8 cups of broth but instructions only show 6. Am I reserving the additional two cups for another step?

Thank God for you and this soup! I couldn’t take it anymore. Zoup’s over the past year has not been making this at all. They said it was going to be made seasonally. No dice.
I’ve contacted my local restaurant and even their headquarters. Their reply is that no one really is selecting it, so they stopped making it. Which knowingly that’s absurd. Because the daily menu changes and if you get there to late they will be completely out of stock to make your delicious soup, every time. You just gave me a strong reason to cook at home now, merrily. Thanks for posting the recipe.

The recipe says parsley but there is not an amount in the ingredients how much do you put in and is it fresh or dried?

Love it! Couldn't find the chilli oil. I check Zoup everyday for a year now and haven't seen it. I only go to Zoup for Dragonfire and Vegetable Soup. Pad Thai noodles aren't bad. Amazon Korean Glass noodles will take a month or so for delivery

I'm so glad I found this! Also from the Cleveland area and Dragonfire was my favorite Zoup soup along with Mushroom Bisque. I look for it all the time but haven't seen it on forever :( Now I can make it on my own :) I'm so glad you won that contest lol

I just tried this soup at my local Zoup. I always order the Thai Curry Chicken, but I tried the Dragonfire soup today and OH MY GOSH - I have a new favorite. Delicious. Thank you for your creation and for sharing it with all of us. This was the first time I've ever seen it on the menu at Zoup out here in Northern VA.

...and I can't wait to try out your original recipe this weekend. Zoup hasn't had this soup on the menu since I first saw it in May. Hoping they'll bring it back at least a few times a month.

I will give my life for this soup. But Zoup hasn’t sold this in my area in PA for 2 years! I don’t know why
