This recipe makes enough for 4-5 people and is super good as leftovers for the next few days too! This recipe is inspired by my creamy tortellini recipe - very similar situation, but with more broth! You could definitely add in some greens like kale or spinach - or some protein like chickpeas or Italian ground sausage or beef!! What you need:

Just made this and it was fantastic!! Added celery because it was in the fridge. My husband is getting over a cold and this soup was hearty, comforting, and had enough kick to warm him up ❤️❤️

Would you cook and drain the sausage separately? When would you add it to the soup?

I think I would cook it first in the bottom of the pot with the onion! Then add the garlic towards the end of cooking the sausage so that it doesn't burn.

I made this for dinner tonight and it was a big hit! Soup isn’t my hubby’s favorite and he declared it “Amazing” and asked me to add it to the rotation.
